PARTY JOLLOF RICE
The secret to an amazing rich colour and taste to party jollof rice is in quantity of onion and tatashe used , we also have some condiments that enhances the taste
*NOTE:- USE MORE OF TATASHE AND ONION, ADD A LITTLE FRESH TOMATOES that’s if you’re using fresh tomatoes*
INGREDIENTS FOR PARTY JOLLOF RICE
- 5 Cups parboiled rice ( not cooked to soft)
- Onion ( a lot)
- Tatashe ( a lot)
- Fresh tomatoes ( optional)
- Shombo
- Fresh pepper
- Tin tomatoes ( for added color)
- Crayfish ( grounded)
- Nutmeg ( grated) very important
- Ginger ( 1 chunk)
- Garlic, curry powder
- Salt and seasoning cube
- Veg oil for frying
- Bay leaves
- Chicken stock
PROCEDURE FOR PARTY JOLLOF RICE
- Blend your onion, garlic, tatashe, fresh tomatoes ( if using), ginger, garlic shombo and fresh pepper together and set aside
- Put your dry pot on fire, add vegetable oil , allow the oil get hot, add chopped onion and fry. add your blended tatashe mixture and fry till the water dries up, add your tomatoes puree and continue stiring until the sour taste goes away
- Add your chicken stock, seasoning cube , curry powder, salt , nutmeg and crayfish allow it to boil. add your per boiled rice ( make sure the stock covers the rice. stir it well on a very low heat. drop few bay leaves (3 pieces ) on the rice and cover very tightly to cook until your rice gets soft and water dries off
- Allow your rice to burn a little bit so the smoke can mix up with the steam and mixes up with the rice. that’s how to get your party rice aroma.
NOTE:- THE STEAM COOKS THE RICE AND NOT THE HEAT. THEREFORE LOWER YOUR HEAT BUT COVER THE RICE ON THE HEAT PROPERLY ( YOU CAN USE FOIL PAPER TO COVER BEFORE COVERING COMPLETELY WITH THE POT’S COVER) TO TRAP IN ENOUGH STEAM TO COOK YOUR RICE
